I've been having this unbelievable craving for pretzels for the last couple of weeks. I was too lazy to go the supermarket to buy my favorite Snyder's Honey Mustard Pretzels the other day and thought that maybe it's about time I make some myself.

After relentless search on the internet for a good pretzel recipe, I've noticed that most of them are pretty much the same. Pretzels call for the simplest ingredients, so I didn't really have any problems making them in my own kitchen.

When it comes to pretzels, I've always been a fan of those crispy, hard ones ( except Aunty Annie's soft pretzels ) And for my first attempt, I made mine into sticks.

My ugly looking first-time pretzel sticks


350 g bread flour ( or any white flour would do just fine )
2 tsp dry yeast
15 g brown sugar
1 tsp salt
1 1/4 cups warm water
1/2 tbsp butter
* 1 tbsp mustard
* 1 tbsp honey

( for the 'hot bath' )
1-2cups of water
2 tbsp baking soda

How to make:

1. Mix the dry ingredients together, melt the butter in the warm water and add the liquid into the dry ingredients. NOTE: Don't add in all of the liquid. Add and mix until you get a rather stiff dough. Knead the dough until smooth and elastic.
*NOTE: If you want to add mustard and honey in the dough, mix together the mustard and honey and mix it together with the dough. Remember to lessen the amount of water.
2. Place dough in a well oiled dough and leave to proof for 30-35 minutes.
3. Punch out gas, and divide dough into smaller portions. Roll the dough out to form into strings of dough ( thin strings if you want them really crispy and hard, and thick ones for crispy crust and soft insides ) and shape them into a pretzel shape or just cut them off to make pretzel sticks.
4. In a pan, heat 1-2 cups of water with 2 tbsp of baking soda, and using the same technique as mentioned in my bagel entry, dip the pretzels into the almost-boiling water until the pretzels starts to float to the surface, drain them well and coat with coarse salt, grated cheese, sesame or poppy seed.
5. Bake in a well preheated oven of 220deg for 5-10 minutes or until the pretzels are nice and brown.

**If you want a softer pretzel, use 1 1/2 cups of warm water.

It is a little bit time consuming, but the end results is very satisfying I also found out that using a pasta maker with the 3mm/4mm cutter produces even size sticks but I'll show you that later.

Bagel Schmagel

Hi everyone. I'm sorry for not being able to update much lately. My winter break had just finished and tomorrow's gonna be a school day. Been doing lotsa things this past two weeks, mostly school work.

So a week has passed in January.. and i bet this month will go by just like that! and to think that my finals are just around the corner I guess I won't be having much time to spend on my fp. But to those who kept on visiting my fp, thank you so much for coming by

Anyways, today I decided to try and make bagels for the millionth time I've tried making bagels before with no success and almost gave up, until I saw this recipe on the internet and said to myself, "..okay, one last time and if my bagels don't turn out like it should be, I'M NEVER GOING TO MAKE BAGELS, EVER AGAIN!! "

and it turns out, my bagels turned out perfect!!

So I'd like to share my triumph with everyone else and hope that you'll get the same result as I did

Plain Bagels


250g bread flour
15g milk powder
2g instant yeast
5g salt
15g brown sugar
1 tsp molasses or malt extract
130ml warm water

How to make:
1. Mix together bread flour, dry yeast, sugar, salt and milk powder. Dissolve molasses or malt extract in warm water and pour into dry mixture.
2. Knead for at least 15 minutes until dough is smooth. ( 8-10minutes using mixer ) Divide the dough into four equal portions, spray with a little bit of water and cover with a dry cloth. Let the dough rest for 10 minutes.
3. Roll out balls of dough to form a long oval and roll sideways like a swiss roll. Press the end of one side and connect the other end to form a circle. ( see picture 1-4 )

4. Cover and let dough rise for 35-45 minutes. I placed the bagels on separate baking sheets so it'll be easier to dump them in the boiling water later on.
5. After the dough has risen, in a big pan pour in 1.5L of water with 1 tbsp of sugar. Heat water until you see small bubbles start to form at the bottom of the pan. DON'T LET THE WATER BOIL TOO MUCH! Preheat oven to 200deg.
6. Soak the bagels in the warm water, about 30 seconds for each side, and drain them well before putting them onto the baking sheet. Immediately bake the bagels for about 20 minutes or until browned.

Makes 4 bagels.

Self note: I'm want to try and make a more softer bagel the next time. I'm thinking of maybe using water from boiling potatoes instead of plain warm water. Will post the results later on

Happy New Year 2007!


Only two days of countdown (6th and 5th day ) and I left my fp unattended Terrible sorry for that

So, did everyone have a great Hari Raya Haji and New Year? I hope so! Our Raya Haji was celebrated moderately, with me cooking bihun soto and begedel with the help of a few friends and another friend cooking rendang and nasi himpit. Pictures? Only managed to catch a few sajer

Anyways, regardless of that, last monday was me and zairul's 3rd anniversary sedar tak sedar dah 3 tahun dah..cepat betul masa berlalu. We ended up staying at home the whole day though, sbb Zairul was tired from working the night before. I didn't really make anything special though, when I thought I would Dunno la.. tak terbuat apa..maybe later I guess

So today is already the 3rd of January, 2007 and the recipe that I'd like to share today was actually made a few days back, when we had no more ayam in the fridge Simple, hearty vegetable pottage on a cold winter night. Sedap makan ngan toasted bread.

3 medium sized potatoes, diced
1/2 a carrot, diced
1/2 a broccoli, cut into smaller pieces
1/2 a large green onion, thinly sliced
1/4 a pumpkin, diced
1 stick of celery, diced
1 clove of garlic, thinly sliced
1 tsp grated ginger
1 cube of chicken stock
1 tsp butter
1 1/2 cup of water
1 cup milk
1 tsp flour stirred in 2 tbsp of water
salt, sugar and pepper to taste
1 slice of cheese

How to make:

1. Dice all veggies into small size cubes and simmer in 1 1/2 cup of water, except for the broccoli. Add in also the onions, garlic, grated ginger and chicken stock and simmer with medium heat for 15 minutes.
2. Later add in milk, slice cheese and butter and simmer for 5-10minutes.
3. Lastly, add in flour stirred in water and season with salt, sugar and pepper to your liking. Cover the pot and simmer again with low heat for 10-15 minutes . Eat warm with toasted rye bread.

** You can adjust the amount of water for the soup. Less water for more thicker soup and more water or milk for thinner soup.

So there you go, another hearty soup for any nights you don't feel like eating rice or maybe just too lazy to defrost the meat or chicken in the fridge. Sedap I tell you! ( puji diri sendiri ker cik kiah oii?? )


School's winter break is almost over and I still have a few more reports to finish. I apologize for not being able to reply all the lovely comments from everyone, but i'll try my best to do so later on okay!

the countdown: 5 days to 2007


was fooling around with the effects in my photoshop


Yesterday was Christmas, made a cake as a present for my part time friends at Marugo. I haven't seen them for almost half a year and it was good catching up with them. They always make me fell welcomed everytime I'm there

Anyways, what I did this time was just an alteration from K.Rossya's swiss roll recipe and add a little touch of spice in the mixture. Base recipe, totally the same but I added a few more things in it:

Ingredients added:

1 tbsp ground ginger
1 tsp ground clove
1 tsp ground cinnamon

After that I didn't really use buttercream for the filling. Instead, I made this:


200 ml heavy / fresh cream
1 tbsp sugar
1 tbsp custard powder
250 ml milk
1 tbsp sugar
vanilla essence

How to make:

1. Whip fresh cream combined with sugar to make whipped cream. Make sure it's not too runny because you'll be mixing it with custard afterwards.
2. Meanwhile, dissolve custard powder in milk and cook. Add in sugar and essence vanilla. The custard cream should be slightly thick. Leave to cool.
3. Mix together whipped cream and custard cream. Keep in the fridge until needed.

Later on, you can cut up some strawberries and kiwis and roll them in the cake. Ice the rolls with plain whipped cream and you can decorate it a little bit more with fresh fruits or anything you like.

I made only 2 rolls, and the other one I turned into something a little different. I sliced them up about 1cm thick and place in a cassarole dish, slather some more whipped cream on top, sprinkle some canned tropical fruits and lastly top it with some vanilla ice cream. Brought that to one of my friends house who happened to have a small eat-together kinda thing at her place.


Tomorrow's gonna be another day.. a day less in 2006 and a day closer to 2007 So many things to look forward to.
