Out to the hospital

Assalamualaikum wbt everyone

Today I'm going to the hospital to get induced, after being overdued for almost 8 days now. Probably won't be back for a few days. Hope everything will go well, and our girl will be born safely, Insya-Allah

Will give an update as soon as we can and thank you for all of your warm wishes and prayers.Wish us luck!

Baking while waiting..

 
 

Tomorrow's my due date and lil' junior still doesn't want to come out yet. Made these this morning, trying to kill the time and at the same time trying NOT to think about when our girl will finally want to come out

It was delicious. Simple and easy to make, we used half of the dough to make cinnamon fan rolls (?)

On another note, here's a picture of my family who is now in Japan, also anxiously waiting for our girl to come out.

37 weeks and still preggie :)

 
Hi everyone.

Yup, I'm 37 weeks and 5 days preggie today. Yup, still no baby. Yup, still waiting anxiously for that time to come.

Good thing is I have one more thing to look forward to. Me family is coming this Saturday. Yup, all the way to Japan

Anyways, in the midst of being pregnant and going to school, I managed to make some time to bake this lovely vanilla cupcake with yuzu mousseline buttercream. Recipe? You can check it out at:
HowToEataCupcake.net for the vanilla cupcake recipe and as for the mousseline buttercream, you can google it and you'll pretty much get the same recipe that I used.



And this is actually the 1st time the frosting went well and piped beautifully, just as I wanted it. I believe the mousseline buttercream is a far better choice than the usual buttercream because it's not as sweet and you can adjust the amount of butter, add flavors and still get a great buttercream frosting.

This week I've hit 36 weeks of my pregnancy. Macam tak percaya I'm only 4 weeks away. Lil' junior is moving a lot, as usual, and probably is trying to find her most comfortable position before she really settles in for labor.

In the mean time, thought I should update my fp. Dah lama sgt tak update, sian lak tgk fp ni terbengkalai mcm tu je Lepas ni takut makin busy la pulak kan..

So here are some stuff that I cooked (quite a while ago). All tasted delicious,worth my time making them. Planning on making them again, but we'll see how things go

Egg Caramel Pudding
Now this is a really easy recipe to follow. You don't need that many ingredients, and it still comes out tasting absolutely yummy.



Ingredients:
Pudding:
400ml fresh milk/evaporated milk
5 tbsp sugar
3 eggs -room temp
2 egg yolks -room temp
2-3 titik vanilla essence

Caramel sauce:
5 tbsp sugar
2 tbsp water
5 sudu besar gula
2 sudu besar air

How to make:
Caramel Sauce:
1. Heat sugar in pan with 1 tbsp of sugar until it starts to slightly browned. Add in 1 tbsp water and cook some more. Pour in cassarole and put aside to cool.
Pudding:
1. Mix eggs, egg yolks and gradually add in sugar. Mix slowly to avoid bubbles.
2. Heat milk and vanilla essence in a pot until it reaches about 60deg. Do not let it boil.
3. Using a strainer, add in the egg+sugar mixture into the warm milk while stirring continously. Stir well.
4. Using a strainer, pour the egg+sugar+milk mixture into the already prepared casserole.
5. Wrap the top of cassarole with aluminium foil and steam for 30mins with med. heat OR bake in preheated oven of 150deg for 40-45mins (if baked, pour water in a baking pan, and put the cassarole onto the baking pan)
6. Chill in fridge.

Double Choc Donut
It's unbelievable that with only a few ingredients, (and no yeast!) you can come up with a delicious donut. It was well worth it!



Ingredients:
**1 egg
**50g sugar
**4 tbsp milk
*80g self rising flour
*30g cocoa powder
50g cooking chocolate
oil to fry

How to make:
1. Sift dry ingredients(*) together and mix wet ingredients(**) together.
2. Stir in dry ingredients into wet ingredients. Mix well.
3. Heat oil. Using a spoon, drop batter into heated oil and fry until cooked (donuts will rise to the surface and become slightly rounded) Be careful not to overcook them since they're brown in color.
4. Melt cooking chocolate (in microwave/using double boiler) and coat fried donuts.

Fried Wanton
I always wondered why we could never find these selling in the pasar malam anywhere in KL. I only got to eat this from a Ramadhan bazaar back in Muar, Johor. Made the wanton skin from scratch since the wanton skin here are not of my liking. Easy and yummy!



Ingredients:
300gm chicken/fish meat (minced or blended)
1 tbsp corn flour
1 tsp sesame oil
5 water chestnuts, diced
salt
1 tbsp Lea & Perrin sauce /Soy sauce
1 tsp sugar (optional)
Carrot and cabbage (finely diced)
wanton skins

How to make:
1. Mix together all ingredients(except wanton skin) and marinade for 30mins.
2. Spoon mixed ingredients onto wanton skin and wrap. Use water as glue to stick the wanton skin together.
3. Fry until golden brown.

Outrageous Chocolate Chip Cookies

Now THIS IS the cookie you should look for when you're drinking your glass milk. It's SOOOOO GOOD that you just can't stop eating them. I had to hide them away so that I wouldn't eat them in one go.
Everyone should try making them. Trust me, you will not regret it!

note: I used chunky PB instead,lessen the sugar ( used more brown sugar instead of white) and sub 1/3 flour with whole wheat flour. Absolutely to die for!
