Coffee Jelly with milk

Third day of my Phase 1, South Beach diet. Been eating tonnes of veggies and no rice, bread, pasta @ carbs since. So far so good

I made this jelly yesterday when I wanted something sweet to nibble on. The diet doesn't allow sweets(duh!) so I made this instead, using Pal Sweet's Zero calorie sugar.

Taste wise, not bad since I've never actually tasted Coffee Jelly before. Here the Japs,oh they love this dessert, usually eating these jellies with cream. Then again, my diet also doesn't allow any full fat dairy for the first 2 weeks, so I had them with low fat milk instead.

Coffee Jelly with Low Fat Milk

Here's the recipe:

400ml water
2-3g kanten powder **1
2-3 tsp instant coffee
2 tbsp Pal Sweet sugar **2
a dash of cinnamon powder **3

How to make:

1. Heat the water and add in kanten powder before water starts to boil.
2. Add in sugar and stir well. Add in the instant coffee and cinnamon powder
3. Give the mixture a short boil, and later pour in a tuppaware. Refrigerate until firm.

**1 Initially the recipe called for gelatin but I wanted the recipe to be a tad healthier so I changed it to kanten powder. But if you don't have any, agar-agar or gelatin works just fine
**2 As for the amount of sugar, it really does depend on oneself. If you'd prefer a sweeter jelly, add more sugar or lessen it for a bitter version.
**3 Is optional. I wanted my jelly to have a nice smell to it. And who doesn't love the aroma of cinnamon!

You can enjoy this dessert with cream, ice cream, chocolate syrup, name it! Anything that goes with coffee is a go-go for this dessert. I had mine with a glass of low fat milk. YUM!!

Last Saturday a friend of mine from Hiroshima ordered some cupcakes from me. That was the first time I made cupcakes based on an order I didn't get to take pictures of the cupcakes that I made (they weren't that pretty anyway Gomenne Hezry!) but I had some leftover mixture of the cupcake that I made so I made a few simply to finish it off.

I got the recipe from here:
Magnolia's Vanilla Cupcake, Magnolia's Chocolate Cupcake

and I used a standard buttercream frosting to frost the cupcakes.

I guess I'll need to supply myself with summore cuppies goods incase anybody were to order anymore from me

This is what my cuppie looks like today. Simple. I also need to work on the design. An amateur I am still, so no big expectations - just yet!

A few more days till I go back for my summer vac. A month at home is something you'll really look forward to after a longggggggg year in Japan

A picture of Zairul tryin' to gobble up some grapes when we went grape picking last week

I just had to post this picture

Have a good day everyone!

Okayama Hanabi Taikai (Fireworks Festival 2007)

These are some of the pictures taken during last Wednesday's Fireworks Festival. It's my first time shooting fireworks, so that explains the not-so sharp pictures. I could've chose a better angle for some pictures, but that's for me to work on the next time I get the chance to shoot fireworks

Only a few of us went to the festival because some had already gone back home. Me, Arif, Fahmi, Leman and Boy were the first few to arrive. We came early to book a spot for us to sit because mannn, were there a lot of people!

The festival lasted for about 2 1/2 hours. And here are among the best shots I got out of the whole 2-1/2-hour show (yang lain segan nk tunjuk sbb banyok gak yg tak jadik )

Anyways, enjoy the pictures everyone!!
