Sambal Ayam

Sambal ayam dimasak untuk dimakan dgn Nasi Lemak. Boring makan sambal ikan bilis pastu ayam pon berlambak2 laa dlm fridge tu.

Browsed for a good sambal ayam resepi and came across this webpage:

Ni bahan2 nyer:

Ingredients:

To marinade the chickies
250g Chicken breast, diced
1-2 tbsp tumeric powder ( Serbuk kunyit )
1 tsp chilli powder ( Serbuk Cili )
1 tbsp coriander powder ( Serbuk Ketumbar )
1 tsp anise powder ( Jintan manis )
1-2cm ginger
black pepper&salt to taste

Chilli paste ( to be blended/pounded )
1/2 green onion
2-3 cloves of garlic
2cm ginger
1 tbsp dried anchovies ( Ikan Bilis )
1cm shrimp paste ( Belacan )
1 tsp tumeric powder ( Serbuk Kunyit )
6-10 dried chilli, soaked and seeds taken out
1 stick of lemon grass

Extra ingredients:
1/3 cup tamarind juice ( not too thick )
2 sticks of lemon grass
2-3 Kaffir Lime Leaf ( Daun limau purut )

How to make:
1. Marinade the chicken breast and deep-fry until just cooked. Don't over fry to maintain the juicy-ness of the chicken when added to the chilli paste.
2. Blend all the ingredients that needs to be blended and saute in 2 tbsp of oil until oil turns reddish ( pecah minyak ) Add in 1 stick of lemongrass, kaffir lime leaf to the chilli paste. If the paste looks too dry, add in the tamarind juice.
3. Simmer for 10 minutes and laslty add in the fried chicken breasts. Cook for 10-20 minutes. Serve with warm rice and accompanied with air sirapp sejukk
