Crepes Suzette ( Crepes in Orange Sauce )

One more day to go and then habes exam. YES!

Made these lovely crepes siang tadi. They were very2 yummy..had 'em with whipped cream and raspberry sorbet. Found the recipe for the crepes from called the 'French Crepes'..very easy to make and the taste is simply wonderful

This crepe recipe gives you very delicate crepes..the batter is quite thin, but easy to handle. As for the sauce, I made my own version of it because real crepes suzette uses liquer in the sauce.
Nevertheless, the sauce I made tasted to what I might say, delicious indeed

Here is the recipe for both the crepes and the orange sauce:
For the crepes
125 g all-purpose flour
4 g white sugar
2 g salt
3 eggs
475 ml milk
1 teaspoon vanilla essence
30 g butter, melted

How to make:

1. Sift flour and add sugar and salt. Set aside.
2. Beat eggs and milk with hand mixer or a whisk and add in vanilla essence. Gradually add the flour mix and stir. Lastly add in the melted butter.
3. Strain the batter into a different bowl.
4. Heat a lightly oiled non-stick pan or griddle over medium heat. Pour the batter onto the griddle using a laddle or spoon and wiggle the pan/griddle to let the batter spread as thin as possible. When doing this, remove the pan/griddle slightly from the heat because the batter cooks very quickly and may cause it to not spread evenly
5. Cook until browned on each sides and put aside.

For the orange sauce
2 tbsp butter
1 1/2 tbsp sugar
juice from 2 oranges
1 cup of Sunquick orange juice
1 tsp cornstarch, dissolved in 1 tsbp of water
2 tbsp white grape juice ( optional )
orange zest

How to make:
1. Melt the butter in a pan and add in sugar. Let sugar dissolve; approx. 30sec-1min
2. Add in the the orange juice and white grape juice. Let it simmer for 4-5minutes and then add in the cornstarch.
3. Stir until orange juice turns into somewhat like a sauce. Turn heat to the smallest possible.
4. Dip both sides of the crepes, and fold into quaters. Do the same for all crepes. Place on a plate and drizzle the remaining sauce on top.
5. Scoop freshly whisked whipped cream and garnish with orange zest. Serve warm.

A great dessert for any meal of the day Simple and delicious.

The history of Crepes Suzette..

"..The origin of the dish and it's name is somewhat disputed. One claim is that the dish was created out of a mistake made by a fourteen year-old assistant waiter Henri Carpentier in 1895 at the Maitre at Monte Carlo's Café de Paris. He was preparing a dessert for the Prince of Wales, the future King Edward VII of England, and his companion whose first name was Suzette.." source: Crepes Suzette,

Yeah..and so it was said that the 14 year-old boy accidently caught the cordials on fire and thought the crepes he was preparing were ruined. Turned out, the crepes tasted astonishingly delicious and the Prince liked it. The dish was later named after a friend of the Prince, and lasted until today as the famous Crepes Suzette

the moral behind the story:
NOT ALL disastorous cooking should end up in the trash. So don't be afraid to explore, and make mistakes .. You might just get a dish named after you
