Raya Cookies

So, after seminggu tak update, here it is.. 2 biskut raya recipes that I made last week. I didn't have time to make more and they don't have shops like Bakewell that to buy the ingredients for making the cookies would probably cost me a lot. Plus, yg nk makan nye pon bukan ramai Hence the 2 recipes only lah..

The first cookie I made was the Kampung Custard Cookies. Here is a recipe I must say, one of those hassle-free cookies that takes very little time to make. I finished baking one whole batch of these cookies for less than an hour!

Here is the recipe people

125 g butter
60 g icing sugar
2 egg yolks, boiled
100 g plain flour
40 g custard flour
70 g corn flour

How to make:
1. Cream butter and icing sugar until light n creamy, add in the boiled egg yolks. Mix well. ( It would be better if you mashed the egg yolks before adding to the butter - that is kalau rajin )
2. Add in the flours and mix to form dough. Roll dough into 1cm thick and cut using cookie cutter.
3. Place on baking sheet and bake at 175deg for 10-15 minutes.

** You can garnish the top with egg wash, cherries or sesame.



And as for the second one, I made 'Italian Chocolate Delight' cookies. I did some alteration from the original recipe due to unavailability of certain ingredients Anyways, here it is:

140 g butter
1 tbsp caster sugar/white sugar
1 tsp coffee/nescafe mixed with 1 tsp water
1 egg
50 g brown sugar
250g plain flour
20 g tapioca flour ( tepung ubi )
1 tbsp cocoa powder
1/2 tsp soda bicarbonate
80 g chocolate chips
60 g diced almond

for the topping:
cooking chocolate
( measurements may vary according to how much you want it on your cookies )

How to make:
1. Cream butter and sugar until light n fluffy. Add in egg and coffee/nescafe. Mix well.
2. Sift flours, cocoa powder and soda bicarbonate and add into the butter mixture. MIx and lastly add in the chocolate chips and diced almond.
3. You can shape the cookies using your teaspoon to give it and egg-like shape of simple roll it to form a ball. Reminder: This cookie doesn't really expand that much so try and not to make your cookies too big )
4. Bake at 175deg for 15-20minutes. Leave to cool off on cookie rack.
5. Prepare the meringue and melted cooking chocolate ( use the double boiler method ) and put into pipping bags. Pipe onto cookies and leave to harden.

** you can opt to not have the topping but the cookie will look like an ordinary chocolate cookie lah


Both recipes are courtesy of my dear Mak Ijad, who happens to go to cooking classes. She had this big file full of recipes ( mostly cakes, cookies n bread ) and I managed to 'copy' a few recipes I had my eyes on. And for Raya, I'm gonna challenge myself to make the famous 'Kek Lapis Songket Brunei'
