Ayam Goreng Pandan with Lemon Olive Oil Cake on the side..

So having to endure the remaining 3 weeks of puasa in Japan is surely not much fun; no pasar ramadhan, no waking up at 3.30am and waking up your sisters yang punye la liat nak bgn sahur, no mommy dearest's cooking..instead, I "get" to cook for myself, and often opting for the simplest meal I could get my hands on.

Bear in mind, this recipe I tried was way back when we've just came back from Malaysia. I guess having the thought of eating nasik goreng for berbuka wasn't that appealing to me, so I cooked.

Some must wonder, "..mana Zack dpt daun pandan kat Nihon (Japan) ??"
Haaa.. itu namanya orang balik Malaysia .. I brought back segala bapak daun yg ada..you name, I got it! acehhh Well, I brought back daun pandan, daun kari, daun kesum and daun kunyit..and even cili merah! ( they don't have big red chillies like at home so I had to bring some back here )

So here's the recipe for the Ayam Goreng Pandan@ Fried Chicken in Screwpine leaves


500 g chicken ( breast, wings, drumstick..any parts would do )
screwpine leaves

to blend:
2 tbsp curry powder
2 tbsp kurma powder
1 soy sauce
3-4 shallots @ 1/4 green onion
2 cloves garlic
1 tsp salt
2 cm ginger
1 tbsp turmeric powder
2 sticks lemon grass
1 tsp sesame
1 tsp honey/sugar
curry leaves

How to make:
1. Blend all the ingredients and marinande the chicken for at least 1 hour.
2. Wrap chicken in screwpine leaves and deep-fry chicken until cooked. ( Oil has to be really hot at first, then turned down to medium heat )
3. Serve with warm white rice

As for the cake, I made it yesterday for an iftar session at one of our friend's house. I've made this cake a couple of times and I have to dedicate this recipe especially to my big sis, Along..since she liked the cake so much last time I made it and kata nak try buat sendiri.. ( ye ke Long? )

My Lemon Cake

Again, simple recipe with outstanding taste and texture And the best part is, I don't have to use butter and still get a wonderful cake! Healthy and less the guilt


240 g flour
280 g sugar
1/2 tsp. baking soda
1/2 tsp. baking powder
3 extra large eggs, separated, at room temperature
120ml cup milk
120ml Extra Virgin Olive Oil
2 tbsp lemon juice
3 tbsp grated lemon zest

How to make:
1. Cream together egg yolks, sugar, olive oil, lemon juice and lemon zest until well combined. Add in milk.
2. Sift flour, baking powder and baking soda. Add to mixture and mix well.
3. Whip egg whites until soft peak forms. Gradually add egg whites to the mixture, mixing slowly during each addition. Scoop mixture from the bottom of the bowl and fold it gently to avoid egg whites from deforming.
4. Line a 9" X 9" square baking tin with parchment paper and pour in mixture. Bake in a preheated oven of 190deg for 25minutes then turn down the temp. to 180deg and bake for another 15-20 minutes or until toothpick comes out clean.
5. Garnish with fresh sliced lemons and whipped cream.
